【Nyonya Cooking with Bee lee Tan】Curry Mee

Ingredients A
400g fresh Hokkien noodles; 300g fresh small praws; 1 cuttlefish, sliced, blanched and drained; 100g congealed pig’s blood, cut into strips; 200g fried bean curd, cut into halves; 100g fresh clams; 40g bean sprouts; 4-5 tbsp oil; 2stalks lemon grass, peeled and bruised; 4 sprigs fresh mint leaves; Salt and rock sugar to taste
Ingredients B
5 dried chillies, soaked and drained; 2 stalks lemongrass, sliced; 6 small red onions, peeled and sliced; 3 garlic cloves, peeled and sliced; 1cm thick belachan; 2 tbsp coriander powder
Ingredients C
4 cups chicken stock; 1 cup thin coconut milk; 1 cup thick coconut milk; 2 stalks lemon grass, bruised
Chilli Paste
2-3 tbsp chilli powder; 1 tbsp coriander powder; 1 tsp cumin powder; 1 tsp fennel powder; 5-6 tbsp water; 6-8 tbsp oil
Note:
Tinned clams and dried cuttlefish can be purchased at Asian grocery stores. Fresh mussels can be used if clams are not available.
Curry mee has an aromatic thin and sweetish flavour in the curry which is very different from Singapore laksa. The fragrant chilli paste is served with the noodles.
Method
Grind ingredients B. Fry in oil with Lemon grass until fragrant. Add chicken stock and thin coconut milk. Bring to boil. Add thick coconut milk and simmer for 10 minutes. Add congealed blood and fried beancurd. Add salt and sugar to taste.
Mix chilli, coriander, cumin and fennel powder with water to form a paste. Heat oil in pan, add chilli paste. Regulate the heat from medium to low. Keep stirring for about 10 minutes until the oil has turned red in colour. Care must be taken with the heat. Serve curry mee by placing some bean sprouts, egg noodles and rice vermicelli in the bowl, add cuttlefish and clams on top. Pour in some hot soup, serve with chilli paste. Garnish with fresh mint leaves.
