【Nyonya Cooking with Bee lee Tan】Sweet Sour Fish

Ingredients A
1 whole fish, 500g (carp, pomfret,
snapper)
2 tbsp soya sauce
1 tbsp cooking wine
1 clove of garilic
2 slices ginger
2.5cm piece green onion
3/4 cup cornstarch
Oil
Ingredients B
3 dried mushrooms, soaked
1 small bamboo shoot
3 slices ginger

Ingredients C
3 tbsp vinegar
3 tbsp sugar
1/2 tsp salt
1/2 cup chicken stock
2 tbsp tomato sauce
1 tbsp cornstarch, mixed with water
2 tbsp fresh peas
Method
Clean fish and score deeply on both sides. Place green onion and ginger inside fish. Pour soya sauce and cooking wine over fish, then dry fish and coat in cornstarch. Fry fish in 190 C until golden-brown and crisp, then set aside. Prepare sweet and sour sauce by heating oil and frying garlic. Add ingredients B and C. Pour sauce over fish and serve immediately.
